Tempt-Your-Tummy Tuesday (Ok, it's Wednesday, I don't care.) - Applesauce Cinnamon Muffins

This recipe is a favorite! They are moist and light and the sugar on top is perfect. I would love to sit down and figure out how to convert this recipe to all scratch and not have to use Bisquick - but that will have to wait for another day.

adapted from Applesauce Cinnamon Muffins

2 cups biscuit/baking mix
1/4 cup sugar
1 teaspoon ground cinnamon
1 egg
1/2 cup applesauce
1/4 cup milk
2 tablespoons vegetable oil
TOPPING:
1/4 cup sugar
1/4 teaspoon ground cinnamon
2 tablespoons butter or margarine, melted

Directions
Preheat oven to 400 degrees.
1. In a bowl, combine the biscuit mix, sugar and cinnamon.
2. In another bowl, beat the egg, applesauce, milk and oil.
3. Stir into dry ingredients just until moistened.
4. Fill greased or paper-lined muffin cups two-thirds full.
5. Bake for 10-12 minutes or until a toothpick comes out clean.
6. Melt butter in small bowl, and combine cinnamon & sugar in another small bowl or empty spice container with shaker lid.
7. Use basting brush to cover muffin tops with butter, then sprinkle with cinnamon/sugar.
8. Eat warm and enjoy!!
