Tempt-Your-Tummy Tuesday - Cinnamon Bun Pancakes

Tried something new for our Sunday Night tradition - we always have breakfast. Usually it is French Toast, but this weekend it was Pancakes. Cinnamon Bun Pancakes to be exact!! OH YUM!!! I will admit that we usually have Krusteaz Pancake Mix, so making them from scratch was more effort than that - but otherwise SIMPLE!!!

Cinnamon Bun Pancakes

1 1/2 cups flour
3 T sugar
1/2 t salt
4 T baking powder
1 T cinnamon (yes - that is a Tablespoon)
2 eggs, beaten
1 cup milk
2 T corn syrup
1/4 c butter, melted
1 T vanilla

Mix dry ingredients together with a whisk, making sure it is well combined. In a seperate bowl, combine rest of ingredients. Add flour mixture and whisk well together. Pour by 1/4 cup measure onto med-hot griddle - they brown QUICKLY so flip them soon.

You could serve them with a powdered sugar glaze like a cinnamon roll - but to further complicate our normal simple breakfast night, I also made this:

Cinnamon Syrup

1 1/2 c brown sugar
1/2 tsp cinnamon
1/2 c butter
1/2 c water
1/3 c corn syrup

In small saucepan, combine sugar & cinnamon. Add butter, water and corn syrup and stir over medium-low heat until sugar dissolves & mixture thickens. Serve hot.

Oh - DIVINE - good thing my family likes cinnamon as much as I do!
