But this one is a REAL favorite for us... and guests I have served it to. It is Erica's ultimate favorite dinner item and Ryan's favorite way to each chicken.
Adobo Chicken - original recipe here - below is my modified version. This is a very flexible recipe - amounts are estimates really.
18 chicken tenders or 1 1/2 chicken breasts
1/2 cup low sodium soy sauce (you really do need the low sodium version - otherwise it is TOOOO strong)
1/3 cup white vinegar
2 Tb minced garlic
1 Tb minced onion dried
Dump in chicken pieces- no need to defrost.
Combine sauce ingredients in small bowl.
Pour over chicken.
Put crock pot on Low- You can leave it at this point - cook it for 6 hours.
If you used frozen chicken and are home: Put it on high and stir after 1 hour, and stir again 30 min later - the chicken should be fully covered by sauce at this point. Then turn down to low. Cook at least 4 hours - as much as 6.
Eat over rice with a veggie side. YUM!
