Tempt-Your-Tummy Tuesday - Blueberry Muffins

Tempt-Your-Tummy Tuesday last week was breakfast muffins, and this week shall be too! This is my mom's famous Blueberry Muffin recipe - an all time favorite of mine. Family will remember that my dad makes these in his cast iron dutch oven - oh so yummy camping food! '

I did not take a picture of these - bummer - cause they are so pretty with the streusel topping on them.

Blueberry Muffins (makes 12)

Batter:
2 cups Bisquick
1/3 cup sugar
1 egg
1/2 cup milk
2/3 cup blueberries (frozen are just fine)

Topping:
1/3 cup Bisquick
1/6 cup sugar
1 Tb + a bit butter or margarine

1. Preheat oven to 400. Grease or line muffin tins.
2. Mix batter ingredients together except blueberries. Fold in blueberries gently.
3. Spoon into muffin cups.
4. For topping, mix together Bisquick and sugar, then cut in butter to make small crumbs.
5. Spoon over top of batter.
6. Bake 20-25 minutes or until streusel topping is starting to get golden.
